15. Where protein is bought and eaten: retail, foodservice and institutions
Traditional markets and small grocers still take 83% of food retail, so a chilled or frozen alternative sits in the frozen vegetarian aisle, in retailer private label or in kitchens. In factory canteens, the largest price-set protein channel, only an ingredient that beats tofu and dry soy-gluten pieces fits, and branded meat replacements are the wrong start in schools.

In one paragraph. Channels decide what form a new protein can take. Traditional markets and small grocers still take 83% of Vietnam's USD 55.5 billion food retail and about 80% of fresh meat, so a chilled or frozen alternative cannot follow meat into the wet market; it can sit only where the frozen chay aisle already is, in modern stores and in retailer private label made by existing co-packers, or go through kitchens. Two chains, Bach Hoa Xanh and WinCommerce, now run about 8,750 stores between them. Foodservice is large (USD 26.6 billion) and fragmented; chains have trialled meat-free items for eight years without disclosing a success, and regional startups that put their own analogue on restaurant menus mostly went quiet. The largest price-set protein channel is factory canteens: up to about 1.2 billion shift meals a year, mostly at VND 20,000 to 35,000, whose caterers lead with pork, fish and chicken and put tofu in 9% of protein dishes. Kitchens already buy tofu and domestic dry soy-gluten pieces at VND 4,000 to 9,500 per 20 g of protein, so only an ingredient that beats those fits, not a branded analogue. School lunches cost VND 35,000 to 40,000, and national guidance (Decision 3958/QĐ-BYT, 2025) already asks for plant protein twice a week, but menus use it on 15% of days and fill it with tofu beside meat, while the menu software prints an animal-protein floor of 48%. An ingredient sold into that slot replaces tofu, not meat; the only school route that removes meat is a labelled blend in the minced-meat and fish-cake dishes served on 28.5% of days. Upland boarding kitchens spend their new public meal money mostly on pork. Corporate commitments are not a volume lever, and Nha Trang's hotels are a showcase, not a volume channel.
15.1 Retail: a wet-market country moving to minimarts

Four things follow for a new protein :
- Two listings reach most of modern grocery. A listing at Bach Hoa Xanh or WinCommerce reaches roughly 8,750 stores. All foreign-owned hypermarkets and supermarkets together number fewer than 200: Central Retail runs 43 GO! hypermarkets, 9 Tops and 23 Lan Chi stores, Lotte Mart 17 stores, and AEON 9 malls with 30 planned by fiscal 2030 9,10,11,12 . The two big chains' growth is minimart-led and rural, so modern trade is no longer only an urban premium channel. Tax and invoicing rules from 2025 that require traceable transactions are expected to favour modern trade further 13 .
- The cold-chain slot already exists. The stores we audited have signed frozen chay sections of two or more door units, stocked by SG Food, Vissan, CJ Cau Tre, bibigo and private labels 14 . We found no current figure for household freezer ownership 15; formats that need no cold chain (dry textured protein, retort pouches, cans) are the only way into the 650,000 traditional outlets 16 .
- Private label reaches that slot without a consumer brand. Saigon Co.op sells more than 2,500 private-label products from more than 100 Vietnamese makers at 15 to 30% below comparable brands, and one certified co-packer, GN Foods, makes all five Co.op Select frozen chay dishes; Lotte Mart sells its own Choice L chay 17,18,14 . Today's private-label chay is starch and vegetable led, sells at VND 107,800 to 141,500 per kg and carries no protein claim, and we found no chay house brand at WinCommerce (one store checked online) or AEON 18,19,20 . A higher-protein version of an existing SKU is a reformulation for the co-packer and a listing decision for the retailer, not a new brand (our inference; untested).
- The integrated meat groups own the chilled meat route in modern trade. Masan sells MEATDeli chilled pork in WinCommerce stores and C.P. Vietnam runs more than 1,000 shops 21 . They are the natural makers of hybrid products, but their own diversification is into animal protein: Vissan is building a 32,000-head pig farm, Masan MEATLife is moving into marinated and processed branded meat, and Vinamilk's Vinabeef chilled-beef plant (10,000 t a year) is operating 22,5,23 .
E-commerce grows fast; it is an incumbents' channel for milk and a small makers' channel for dry chay. Grocery and food on the four big marketplaces sold VND 19.55 trillion in the first half of 2026. That is about 2 to 3% of food retail value on the 2024 base, up from about 1% (our calculation; Metric does not publish its category definition) 2,1 . Official brand stores took 85% of liquid-milk sales on Shopee in early 2026 (Vinamilk 54%), and official or mall stores sold 93 to 100% of the milk units we read on Lazada 24,25 . Households buy plant milk online at a scale close to dairy: the best plant-milk SKU sells 60% of the litres of the best dairy SKU on Lazada and 79% on Tiki, against about 3% in the kitchen channel (our calculation on cumulative counters) 25,26,27 . Dry chay pieces are different: nine listings of dry soy-and-gluten "ribs" show about 40,700 kg sold, 82% of it from one small shop without an official store, while frozen chay sells hundreds of kilograms per listing and no imported analogue appears 25,28 . For a new protein, e-commerce is a place to test a milk or processed product through an incumbent's official store, and a real route for a small maker of dry chay ingredients; it is not a cheap launch route for a new consumer brand .
15.2 Foodservice: large, fragmented, and silent about meat-free trials
Foodservice was worth USD 26.6 billion in 2024 across about 323,000 outlets: full-service restaurants 69% of sales, cafés and bars 18%, street stalls and kiosks 10% of sales from about 152,000 outlets, and fast food 3% from about 11,000 29 . More than 50,000 operators closed in the first half of 2025 29 . Fast-food chains are few (about 1,000 outlets) but buy centrally and can list a product nationally overnight; hotpot and grill chains are protein-heavy and centrally supplied, an under-examined route for hybrid and chay protein 9 .

The pattern: mass chains priced meat-free items at parity with core items (VND 39,000), timed them to the lunar calendar and used vegetables or chay ingredients rather than imported analogues; the imported premium analogues came through a craft bar, a café chain and a HoReCa (hotel, restaurant and catering) distributor and did not stay. No operator has disclosed volumes, repeat rates or why items ended . Read chain launches as supply signals, not as demand evidence, until outcomes are known.
Startups that sold their own analogue through restaurants fared no better. Of 24 regional and Vietnamese alternative-protein firms that entered, tested or left the market from 2019 to 2026, 7 are active, 4 pivoted, 2 exited and 11 show no activity after their last dated news; of the 12 that launched their own brand on restaurant or café menus, 7 are dormant 39,40,41 . None of the four Vietnamese meat-analogue startups we found is active, while all three makers of familiar formats (mushroom floss, cashew cheese, tempeh) are 42,43,44 . Every pivot moved towards private label, co-manufacturing or non-food ingredients, and TiNDLE's founders cited "no real underlying consumer demand to shift away from meat" 39,45 . The regional exception, Indonesia's Green Rebel, grew through foodservice partners with regional dishes and raised USD 10.5 to 12.5 million in early 2026 46,47 . With 24 firms and "dormant" meaning only "no news found", this shows no advantage for menu placements of a branded analogue, not a proven disadvantage; no startup in the register has yet tried to sell an ingredient to Vietnamese incumbents (firm_outcomes.csv, firm_base_rates.csv) . 0 of 4
Corporate commitments are not a volume lever in Vietnam. One published commitment binds business units here: Accor's Good Food Policy asks all its hotels for 50% vegetarian or plant-based dishes by 2030 (Novotel 25% by 2026), and Accor ran 43 hotels in Vietnam in October 2024 48,49 . The metric counts dishes, which tofu, vegetables and noodles can fill (our inference). Marriott's 2026 to 2030 goals contain no food goal; IHG, Hilton and Minor have cage-free egg pledges whose Asian delivery lags far behind (IHG East Asia and Pacific 4.1% of hotels aligned in 2024 against 70.3% globally; Hilton Asia Pacific managed hotels 42% in 2025; Minor's Asia Pacific hotels 13% in 2025) 50,51,52,53 . Sodexo's Vietnamese operation is unconfirmed, and Lever Foundation, which turns pledges into procurement ratios in Asian hotels and caterers, extended its plant-based work to India and Thailand in July 2026, not Vietnam 54,55,56 . No Vietnamese protein buyer publishes a diversification target (Business buyers; corporate_commitments.csv).
15.3 Institutions: the largest price-set protein channel
Factory canteens. About 4.15 million people worked in industrial parks and economic zones at the end of 2023 57 . The trade union's floor is VND 25,000 a meal when a caterer is hired and VND 20,000 when the firm cooks itself (regions I and II; VND 22,000 and 18,000 in regions III and IV), and each meal must include a protein food 58 . Prices paid run from VND 17,000 to 50,000: Hai Phong's 2026 average is about VND 27,000 in the west and 31,000 in the east, with some firms at VND 17,000; foreign-invested factories there pay VND 25,000 to 35,000 and northern garment firms VND 17,000 to 25,000 59,60,61 . The contract catering market is about USD 2 billion a year; food is 60 to 80% of the meal price; suppliers report informal commissions of VND 500 to 1,000 per meal to clients' purchasing staff; and the largest caterer, Haseca, reports more than 200,000 meals a day from more than 120 kitchens in five tiers of VND 18,000 to 45,000 (company claim) 62,63 . At about 300 meal days a year, industrial-park canteens serve up to about 1.2 billion meals (our upper-bound calculation) 57,60 . up to about 1.2 billion
What canteens serve. Five caterers' published sample menus (172 protein dishes, 2023 to 2025) lead with pork (33%), fish (26%) and chicken (13%), then egg (10%), tofu (9%, only 3% plant-only) and beef (6%); minced or processed meat makes up 17% of protein dishes 64,65,66 . Haseca rotates "2 days pork, 2 days chicken or fish, 1 day tofu or egg" with a main dish of 90 to 120 g; one caterer serves chay dishes on two lunar days a month; none names textured soy or mock meat 66,67 . These are marketing samples, four of the five from the south. Shift-meal nutrition guidance (Decision 1982/QĐ-BYT, chapter V) sets no plant slot and no protein norm, and the union's menu principles ask for 30 to 50% of protein from animal sources 68,69 . A canteen ingredient therefore has two slots: the tofu slot, where it competes with tofu, and the minced-meat slot, where a blend displaces pork. Because chicken leads only 13% of protein dishes, a canteen meal switched to plant protein spares few animals; Demand sizing carries that arithmetic . pork 33%, fish 26%, chicken 13%, tofu 9%
What a protein ingredient must hit in a canteen (our calculation) . With food at 60 to 80% of a VND 25,000 to 35,000 meal, the food budget is VND 15,000 to 28,000. If the protein dish takes about half, it has VND 7,500 to 14,000. Twenty grams of protein from eggs or chicken breast costs VND 6,900 to 9,000 at retail (Protein diet). From a branded retail textured or gluten analogue (VND 112,000 per 100 g of protein, 14) it costs VND 22,400, more than the whole protein budget. From textured plant protein at the supply study's indicative ex-factory cost (VND 3,700 to 10,700 per 100 g of protein, Economics) it costs VND 740 to 2,140. VND 7,500 to 14,000
The price that binds, though, is what kitchens already buy. On Kamereo, a platform that supplies more than 4,000 restaurants, cafés and hotels (company claim), 20 g of protein costs about VND 4,000 to 5,100 as domestic dry soy-gluten pieces (on a borrowed protein range), VND 7,200 to 9,500 as tofu, VND 8,800 as eggs, VND 9,600 as chicken breast and VND 13,900 as minced pork (our calculation) 38,72,73 . Loose tofu shows 78,058 units on the platform's sold counter, while CP Meat Zero, listed at 1.5 to 2.1 times CP's own minced pork per kilogram, shows 386 units across eight SKUs and could not be ordered on 25 September 2026 38,37 . A new ingredient must beat dry soy-gluten pieces on cost per gram of protein or on function, and reach caterers through the chay-piece makers and HoReCa distributors that already supply them; a branded analogue at retail prices does not fit .
Schools: price, buyers and trust. Lunch costs VND 35,000 in Ho Chi Minh City (2025 to 2026) and VND 40,000 in Hanoi for 2026 to 2027, of which the city pays VND 28,000 and parents VND 12,000 (Resolution 84/2026/NQ-HĐND) 74,75,76 . In 2025 to 2026 Hanoi subsidised lunch for about 768,000 primary pupils at VND 20,000 (VND 30,000 in mountain and island areas), a VND 3,063 billion budget; 90% of its schools provide bán trú (school lunch and midday care) 77 . That budget buys roughly 100 to 150 million subsidised meals a year (our calculation) . We found no national count of pupils eating at school. Menus are written by caterers, not by the state: in Hanoi a ward evaluation council assigns caterers and food, milk and water suppliers to each school, the caterer writes the menu with grams and calories and the principal co-signs, and one caterer wrote near-identical menus for three schools 78,74,79 . A Hai Phong school tender fixes the price at the regulated norm, scores caterers on capability and on the extra portion value they add, and asks for a food-safety certificate, revenue of at least VND 3 billion, three school or industrial-zone contracts and certified food suppliers 80 . In April 2026 about 300 tonnes of pork from pigs with African swine fever, relabelled as clean, reached 26 Hanoi public schools and private kindergartens through two caterers 81 . The Prime Minister's Dispatch 64/CĐ-TTg of 13 September 2026 requires traceable suppliers and procurement "not based solely on lowest price" 82 , and Directive 33/CT-TTg (14 August 2026) adds supplier certificate checks and daily public disclosure of the caterer, ingredients, invoices, menus and photos of meal trays, without restricting any food type 83,84 . In September 2026 Hanoi parents took school-meal samples to the national food-safety testing institute to check the meat in them 85 .
The rule asks for plant protein; menus fill it with tofu. Our first reading took school meals to be guided by Decision 1340/QĐ-TTg (2016), a school-milk programme whose target of animal protein above 40% of total protein ran only to 2020 86 . The rule now in force is MOH Decision 3958/QĐ-BYT (25 December 2025). It sets no animal share. It asks for protein at 13 to 20% of energy, animal protein on at least 4 to 5 days a week "alternating with plant protein (legumes, tofu) at least twice a week", fish 2 to 3 times a week and limits on processed meat and sausages; its 139-item food table lists tofu, soybeans and soy milk but no textured soy, gluten or analogue. It is guidance with no sanction, and it excludes preschools 87,88 . The menu software that schools and caterers use, from MOET, Ajinomoto Vietnam and NIN, still prints a standard of "animal protein at least 48%" of each lunch's protein; it is not enforced, since 9 of 25 published days fall below it 89,90 . at least 48% of protein
What schools serve. In 48 published school-weeks (239 lunch days) from 22 primary schools in Ho Chi Minh City, Hanoi and Hai Phong, March to September 2026, 36 days (15.1%) had plant protein in a protein dish, almost always tofu; only 9 of 48 weeks met the twice-weekly rule; 1 day in 239 had no animal protein; and none of 333 protein dishes used textured soy, chay mock meat or a branded analogue 91,92,93 . Tofu is served as a second dish beside a meat or fish main (27 of 36 plant days) or cooked into a meat dish (8 of 36). Minced or processed meat or fish dishes (meatballs, pork loaf, sausages, fish cakes) appear on 28.5% of days 91,93 . Lunches carry about 31.8 g of protein, 17.5 g of it animal (our calculation from the software sheets) 89 . Day-level coding is in school_menu_weeks.csv. 15.1% of days
The school verdict. Do not start in schools with a branded or meat-replacement product. A plant ingredient sold into the required plant slot replaces tofu, not meat, and competes with it on cost: tofu costs VND 4,900 to 7,500 per 25 g of protein and a textured-soy ingredient VND 925 to 2,675 before oil, sauce and labour (our calculation) 94,95,92 . The slot is small: at today's frequency it holds about 1,000 t of protein a year (660 to 1,580 t), and about 2,800 t if every school met the rule (our calculation from 0.5 to 1.2 billion school lunches a year) . The only school route that removes meat is a named processor's labelled blend in minced-meat and fish-cake dishes: a 25% blend in every such dish would remove about 460 t of meat protein a year (our calculation) . A 20 to 30% soy extender keeps the dish's protein quality at a DIAAS of about 97 or more (older-child pattern), with 12 to 19% less zinc per gram of protein than all-pork, so blends raise no nutrition objection; a dish that removes all meat would need added zinc 96,97,88 . For school-age children protein is not the gap; the documented shortfalls are breakfast, calcium and vitamin A (below). Korea shows what a rule change can do: all 17 education offices recommend plant-based school meals once or twice a month, and Seoul's plant-based menus carried 26.7 g of protein against 29.9 g for regular ones in 2023 98 .
The rule window and the milk precedent. Decision 973/QĐ-TTg (School Health Programme 2026 to 2035, 1 June 2026) orders a MOET circular on bán trú meal organisation in 2026 and MOET digital tools for balanced menus in 2027 to 2028 99,100 . Press coverage describes a model with 400 standard menus and a daily carton of fresh milk, which the decision's text does not name 101 . The dairy strategy (Decision 309/QĐ-TTg, 2026) says school milk programmes use "only fresh milk" 102,103 , and Hanoi's school milk tender went to one incumbent on a domestic-manufacturing condition, with the state, the supplier and parents sharing the cost 104 . Plant milk reaches schools only as a gift: Vinasoy has donated 13.8 million boxes of soy milk to 906,848 pupils since 2016, and 1 million boxes to 30 schools for 2026 to 2027 105,106 . The levers for plant protein in schools are the menu software's default and food list, the 2026 circular and the few caterers that each write one menu for many schools, not a nutrition target .
Upland boarding and border-commune meals. Public money now buys three meals a day for ethnic-minority boarders and lunch for border-commune pupils: VND 936,000 a month and 15 kg of rice per semi-boarder (Decree 66/2025), VND 1,170,000 and 15 kg per full boarder in the new boarding schools (Decree 188/2026), and VND 450,000 and 8 kg for about 418,000 pupils in land-border communes (Decree 339/2025; more than VND 2,000 billion and 30,000 t of rice a year at draft stage) 107,108,109,110 . School kitchens, not caterers, cook, and they spend the money on pork. In 13 boarding schools in five provinces that publish menus (22 school-weeks, 2026), 240 of 242 lunches and dinners carried a meat, fish or egg dish and pork led 74% of them; at one border school 91 to 97% of the Decree 339 lunch money (rice aside) bought pork 111,112,113 . Kitchens already stretch pork with tofu: on tofu days at Muong Nhe the lunch used 35% less pork and cost 27% less for about 8% less protein (our calculation) 111 . No textured soy or mock meat appears in 353 meals. The thin meal is breakfast (86% carry little or no animal food), and the only kitchen-weighed boarding diets we found met protein and zinc needs but supplied 36.5% of calcium and 41 to 45% of vitamin A 111,114 . Stunting (32% among ethnic minority children, 2023) is set largely before age two, outside school kitchens 115 . Suppliers need a business registration and a food-safety certificate, and a principal in Bac Ha, Lao Cai, was arrested after boarding rations fell below the regulated norm, so the plan is not always the plate 116,117 . The one plant product with an observed job here is a pork extender sold at the tofu price per gram of protein; nobody has asked these kitchens whether they would buy it . 240 of 242 meals
Hospitals and the military. A 2025 patient-meal tender at a public hospital in Ho Chi Minh City (about 81,800 rice and 20,500 porridge meals a year) requires 1,800 kcal and 60 g of protein a day, and per meal at least 60 g of meat, fish or poultry or at least 120 g of tofu as a full replacement, with a tofu version among three sample menus 118 . The tofu swap gives about 13.1 g of protein against 11.4 g (our calculation). It is the one public-meal specification we found that lets a plant food replace meat, and it names tofu. The army's basic food allowance is VND 72,000 per soldier a day under Circular 96/2025/TT-BQP, up from VND 65,000 119 ; we found no ration composition or procurement rule. Workplace and hospital meal guidelines are not legally binding 120 .
15.4 Tourism and the Nha Trang hypothesis
Vietnam received 21.2 million international visitors in 2025 (up 20%) and 15.9 million in the first eight months of 2026; China was flat and Korea down in 2026 while Russia and India grew fast 122,123 . Khanh Hoa (Nha Trang) received 5.5 million international visitors in 2025 and has 70,500 rooms, over 40% of them four and five star; its visitors come mainly from Korea, Russia and China 121,124,125 . Direct flights from India, the one fast-growing market with structural vegetarian demand, land in Hanoi, Ho Chi Minh City and Da Nang, not Nha Trang 126 .
Verdict. The project's hypothesis that Nha Trang's tourist-driven hotels and restaurants are a channel for plant-based products is not supported as a volume channel. Our rough calculation gives 1 to 2 million vegetarian or vegan meal occasions a year from international visitors to Khanh Hoa, against 100 to 150 million subsidised school lunches in Hanoi alone and up to 1.2 billion factory meals nationally 121 . It is plausible as a small showcase for premium analogues and higher-protein chay dishes in four and five star hotels, and hotels now have one named reason to meet a supplier: Accor's target of 50% vegetarian or plant-based dishes by 2030 binds its 43 Vietnamese hotels, and it has signed a Mercure in Nha Trang 48,49 . The target counts dishes, which vegetables and tofu can fill, and Accor's 2025 cage-free pledge was "not yet achieved in Asia" 127 . One Vietnamese tempeh maker names a Sheraton hotel among its customers 43 . The hypothesis is cheap to test: interview 20 hotel and restaurant food-and-beverage managers, Accor's first, and audit 30 menus. Domestic tourists who keep chay days may matter more there than foreign vegetarians (untested).
15.5 Channel economics: absent, not weak
We found no retrievable Vietnamese source on retailer listing fees, trade margins, payment terms, distributor margins or frozen distribution costs per kilogram. The numbers we have are from catering (food at 60 to 80% of meal value; commissions of 2 to 4% of a VND 25,000 meal) 62 , the supply study's finding that dried soy analogues retail at 5 to 17 times the indicative ex-factory cost of their protein (Costs and benchmarks), Saigon Co.op's private label priced 15 to 30% below comparable brands, with a supplier portal that answers a product pitch within 10 working days but keeps its document list behind registration 17,128,129 , and the first public kitchen-delivered prices, on Kamereo (15.3) 38 . Ranks are our judgement from the evidence above; size is documented, fit is mostly inferred, and there is no tested evidence in any Vietnamese channel .

15.7 What this means for the frontier
- Sell ingredients to the firms that feed kitchens and factories before building a shelf brand. The largest price-set protein demand is in canteens and in manufacturers that already buy imported textured soy and gluten; reach caterers through the chay-piece makers and HoReCa distributors that supply them, and beat tofu and dry soy-gluten pieces per gram of protein.
- If you make a consumer chay product, design it for the frozen chay section of the big chains (at or below the meat price, 10 g or more protein per 100 g, familiar formats), or take a protein upgrade of an existing private-label SKU to the retailer through its co-packer.
- Do not start in schools with a branded or meat-replacement product. Enter later as a caterer ingredient that beats tofu on cost, or as a named processor's labelled blend in minced dishes.
- Price meat-free foodservice items at parity and time launches to the lunar calendar.
- Use e-commerce to test, through an incumbent's official store or, for dry chay pieces, through specialist shops; do not build a business on tourists, and use hotels as a showcase only if you already supply the big cities.
For each reader.
- Startups: sell a familiar food with little capital, and aim first for ingredient, private-label or co-packing supply to incumbents (a chay maker, a caterer, a retailer's co-packer). A restaurant menu listing for your own analogue brand is not a business customer: in the region such firms mostly went quiet or pivoted. No founder has yet tested the ingredient route, so treat it as the hypothesis to test, not a proven path.
- Investors: channel access is concentrated (two grocery chains, a few meat groups, a few large caterers and one private-label co-packer for chay); back companies whose product a channel partner buys as an ingredient or under its own label, and price foodservice churn as risk. Corporate commitments add no volume here.
- Manufacturers: incumbent chay makers hold the frozen sections and convenience contracts; a co-packer can take a protein upgrade to a retailer's private label without a consumer brand; HoReCa distributors already sell tofu and dry soy-gluten pieces to kitchens in volume; integrated meat groups are best placed to launch hybrids.
- Research bodies: work on bulk-cooking functionality (holding, reheating, broth absorption) and dry formats that travel without a cold chain; run a two-week plate-waste trial with one caterer that writes one menu for several schools, testing a textured-soy dish in the plant slot and a 20 to 30% blend in one minced dish, with the published daily menus as a free control series.
- Policy makers: national guidance already has no animal share. Ask MOET, NIN and Ajinomoto to replace the menu software's "animal protein at least 48%" default with protein-quality, zinc and iron targets and to add textured soy and legume products to its food list, and write both into the MOET bán trú circular due in 2026 and the digital menu tools due in 2027 to 2028 (Decision 973/QĐ-TTg). Supplier documents are now set by Directive 33/CT-TTg; transparent canteen procurement helps new entrants more than subsidies.
- International organisations and funders: match the trial to your unit. A canteen trial should log the dish species it replaces, because chicken leads only 13% of canteen protein dishes and pork dishes spare few animals; import substitution and protein upgrades on existing chay days spare none (Demand sizing). Humane World for Animals, which trained chefs and nutritionists in Viet Nam in 2025, is the one implementer with Vietnam staff 130 ; Viet Nam is not listed as a School Meals Coalition member 131 . Corporate commitments are a weak lever: fund implementation measurement at Accor's Vietnamese hotels and a disclosure request to Vinamilk, not a new pledge campaign. Fund the missing channel data (margins, listing fees, frozen distribution costs, national bán trú coverage).
